Soft and creamy morsels that are perfect right out of the oven. Undeniably one of my favorite cookies and the dash of cream de tartar makes all the difference!

Snickerdoodles are known for their cinnamon taste and gooey center. They’re the perfect cookie for sandwiches some vanilla ice cream. They have this quintessential taste that everyone always brings up, but when I think of them I think of cream of tartar.
Cream of tartar is an acid that you combine with baking soda to leaven the cookies. It makes them soft and almost pillowy on the inside. I love that they’re known for one thing, but when I think about them…they’re something entirely different.
Which reminds me so much of Katherine Van Pelt in Cruel Marriage. Katherine throughout most of the novels–starting by her entrance in The Wright One through the original Cruel trilogy and on into her Cruel spin offs–is a villain. She’s this jaded, sort of bitchy, manipulative, selfish antagonist.
But by the time you get to her own story, you discover there’s something much deeper to her. There’s an acid at her core that leavens the story.
Meet Katherine and Camden Percy, the anti-hero she arranges to marry for his immense fortune, in Cruel Marriage.
Ingredients
- 2 sticks butter
- 300g sugar (1 1/2 cup)
- 2 eggs
- 2 tsp vanilla
- 375g flour (2 3/4 cup)
- 1 1/2 tsp cream of tartar
- 1/2 tsp baking soda
- 1 tsp salt
- cinnamon sugar mixture:
- 1/4 cup sugar
- 1 1/2 tsp cinnamon
Directions
1. Preheat oven to 350°F.
2. Cream the butter and sugar together until light and fluffy. (at least 5 minutes) Then add vanilla and eggs one at a time.
3. Combine flour, cream of tartar, baking soda, and salt in bowl then add to wet ingredients. Mix until just combined then refrigerate dough for 30 minutes.
3. Mix cinnamon and sugar together in a medium sized bowl.
4. Take dough out of fridge and roll in golf ball sized dough. Put excess dough back in fridge when not working at it as you don’t want the butter to melt. If you don’t live in Texas, you can probably do what you want because you’re not currently boiling. Then roll the dough into the cinnamon sugar mixture.

5. If you can spare the time, put the rolled dough back into the fridge for 10-15 minutes. This helps them keep their shape when baking.
6. Bake for 12-15 minutes. Then let sit on baking sheet for a few minutes to harden before transferring to cool.

My ex mother in law made the best snickerdoodles! She used an Amish cookbook which she gave me a copy. She used numerous recipes from it and I’ve tried quite a few. I’m going to try yours first.
